Mould making and chocolate showpiece course info - March 2019


The Course: This 3-day Advanced Chocolate Showpiece course is meant for advanced students in the catering trade, pastry chefs and other professional or semi-professional persons interested in gaining the necessary knowledge and experience in the preparation of moulds, casting and working with chocolate for the creation of Master Class Chocolate Showpieces. This course is also open to citizens of other countries fluent in the English Language. The course is given in Maltese and English.

The Tutor: The tutor for this course will be Culinary Artist Christopher Zammit, 2015 UK Pasty Open Champion in Chocolate Showpiece and Entremet. He was also part of Team UK in the 2017 Coup du Monde de la Patisserie and his Chocolate Showpiece placed in the top 5 worldwide. He is presently engaged by Callebaut in their Chococommando program, promoting their range of chocolate and ice-cream products

The Aim: Chris will involve you in the process of building up your showpiece from the sketching stage to the completion of the full showpiece. Besides learning how to design a showpiece, you will also be tutored on

  • creating moulds
  • moulding techniques
  • casting and carving
  • modelling
  • colouring and polishing

You will learn different techniques giving your artistic flair the ability to create an over 1 metre chocolate showpiece on your own.

Over the three days, Chris will teach you the modern techniques enabling you to produce a stunning chocolate showpiece at par with competition level. At the end of the course, you will gain all the skills and confidence to create your own moulds and produce your own showpieces.

Course Material: All the material and tools necessary will be made available for use by the students for the duration of the course. The possibility to purchase one’s own tools will be made available at the end of the course. Please bring your own Chef Jacket and apron. As this is a full day course, complimentary sandwiches, snacks, teas and coffees will be provided.

Venue: The course will be held on the premises of WorldWide Co. Ltd at Triq il-Belt Valletta, Qormi QRM 3617, where each participant will be allocated his or her own individual working station.

Places & Dates: In order to give personal attention to each student, places are limited to 9 participants per class and will be accepted on first come first served basis. The dates for the course are 12th, 13th and 14th March 2019.

Certificates: At the end of the course, each participant will be given an attendance certificate and a ‘goodie bag’ as a souvenir. Your own showpiece creation is also yours to take home with you.

Course hours: As this is an intensive course, there is no limit on the length of the tutorial each day but will approximately last till 5:00pm. The day will start at 8:00am and participants are expected to be at their working station at 7:30am. There will be a lunch break around 1:00pm.

Course fees: The course fee is €550, inclusive of all ingredients used during the course. The fee includes free use of tools and utensils and complimentary lunch for 3 days.

Payment of fees: A deposit of €100 is to be effected before the 16th February 2019 in order to secure a place in the course. No places will be reserved without a deposit. The balance of €450 is to be made by Monday 4th March. Payments are to be received at
