Chocolate Pralines Course info - April 2018

The Course: This is an intensive course spread over 8 hours and is mainly aimed at students in the catering trade, pastry chefs and other semi-professional persons looking to increase their knowledge of working with chocolate. It is also aimed at members of the public who would be interested in opening their own chocolate outlets or in creating their own chocolate pralines for their own consumption.

The Tutor: The tutor for this course will be Culinary Artist Christopher Zammit, 2015 UK Pastry Open Champion in Chocolate Showpiece and Entremet. He was also part of Team UK in the 2017 Coup du Monde de la Patisserie and his Chocolate Showpiece placed in the top 5 worldwide.

The Aim: Chris will guide you from the initial process of

  • tempering the chocolate
  • preparation of chocolate moulds
  • ganache and other fillings
  • decoration of the finished pralines
  • glazing

In between, you will also be instructed on

  • the best working and storage environment
  • tools
  • how best to avoid blemishes in the finished products

At the end of the course, you will be able to produce an assortment of quality pralines having classic and original fillings. Presentation boxes will be available free of charge.

Course Material: All the material and tools necessary will be made available for use by the students for the duration of the course. The possibility to purchase one’s own tools will be made available at the end of the course. Please bring your own Chef Jacket (if available) and apron. As this is a full day course, complimentary teas and coffees will be provided.

Venue: The course will be held on the premises of WorldWide Co. Ltd at Triq il-Belt Valletta, Qormi QRM 3617, where each participant will be allocated his or her own individual working station.

Places & Dates: In order to give personal attention to each student, places are limited per class and will be accepted on first come first served basis. Dates for the first course will be the 17th and 18th April 2018.

Certificates: At the end of the course, each participant will be given an attendance certificate. Your own chocolate preparations are also yours to take home with you.

Course hours: The day will start at 8:30am and participants are expected to be at their working station at 8:00am. There will be a lunch break around 1:00pm. The course is meant to end at 5 but might extend a bit further.

Course fees: The course fee is €90, inclusive of all ingredients used during the course, use of tools and utensils.
